Rochester Chicken Wings... a serious addiction
Buffalo wings are dry and chewy. What my heart craves are Rochester wings. Wet and covered in the most amazing tangy sauce that is somehow hot, sweet, salty, savory, and upside down all at the same time.
Traditionally we eat it only hot and hotter. Mild is never ordered, and only used for "mixed" which is an order 50% mild and 50% hot shaken together, aka the wimp order. But sometimes, you need your tongue for other things so a wimp order is ok.
Here are some recipes for the standard Hot and Nuclear varities
Rochester Sauce Hot
Ingredients:
1. 2 Cups cider vinegar.
2. 1 ¼ Cups sugar.
3. 6 oz. Honey (add more for thicker sweater sauce).
4. 6 oz. Mustard.
5. 2oz. Ketchup.
6. 3oz. Frank’s Red-Hot. ( Texas Pete )
7. 6 oz. can crushed pineapple. Puree in blender.
8. 1/2 cup Crushed red pepper flakes
9. dash of worcehstershire sauce
Directions:
1. Combine first 3 ingredients and use medium heat until sugar is dissolved and watery.
2. Then add the next 3 ingredients.
3. Drain pineapple and puree in blender then add to sauce.
4. Add Red pepper flakes and bring mixture to boil. ( Caution: Boils over easily.)
5. Add 1Tsp. Cornstarch and water to boiling sauce to thicken.
6. simmer ½ hour.
Rochester Sauce Nuclear
Ingredients:
1. 2 Cups cider vinegar.
2. 1 ¼ Cups sugar.

6. 3oz. Frank’s Red-Hot. ( Texas Pete )

9. 10 habanero peppers
10. dash of worcehstershire sauce

Ingredients:

6. 3oz. Frank’s Red-Hot. ( Texas Pete )

9. 10 habanero peppers
10. 3 ghost peppers
11. dash of worcehstershire sauce
Do NOT serve Nuclear or Insanity without a written release! May cause violent hiccupping and vomiting. Insanity is best used as a light on top of sauce for Nuclear so you can add just a little.

4. Add Red pepper flakes and bring mixture to boil. ( Caution: Boils over easily.)

6. simmer ½ hour.
Deep fry wings in light olive oil until very crisp
drain (spin!)
Now toss with sauce just before eating. serve dripping with sauce
